The story
In Seville a tapa is a way of eating, not just a dish: small plates ordered round by round at the bar, often standing, before moving on. Lunch starts around 14:00 and the evening round rarely before 20:30, so the crawl follows the city's own hours.
The flavours come from all over Andalusia: dry fino and manzanilla from Jerez and Sanlúcar, jamón from the oak pastures of the Sierra, salmorejo from Córdoba, and fish fried in olive oil from the coast. Espinacas con garbanzos, spinach and chickpeas with cumin and paprika, is pure Seville.
