What you'll taste. Four stops and enough food for a light meal: vermouth with a gilda and olives; jamón ibérico and Manchego with bread; hot tapas such as croquetas, tortilla de patatas and a small bocadillo de calamares; and churros with hot chocolate to finish. Adults drink vermouth, wine and beer; children get non-alcoholic drinks such as soft drinks or juice.
Where you'll go. You meet in Plaza Mayor and walk down through the Arco de Cuchilleros into La Latina, the medieval heart of Madrid. Cava Baja follows the line of the old city wall, and its coaching inns once sent carriers off to Toledo and Segovia; today it is lined with taverns. Your guide explains the vermouth hour, how to order a caña, and why lunch rarely starts before two.
Group and pace. A live guide leads the walk in English, and groups are kept to 12. Walks between stops are short, about 2 km in all on cobbled and sometimes sloping streets, and you sit or stand at the bar at each stop. Minimum 2 travellers per booking.
Dietary needs. Tell us about allergies or diets when you book. Vegetarian options can usually be arranged; vegan, gluten-free or seafood-free menus are harder in traditional tapas bars, so please ask before booking.
